Prime Rib and the holidays are a perfect combination. It is truly that iconic holiday dish– a big roast on the table with a bunch of amazing side dishes, some spicy horseradish sauce, and plenty of good cheer. Slicing into that roast in front of family and friends is an amazing feeling, and since we’veContinue reading “Planning Ahead for the Holidays: Prime Rib”
A grilled burger stuffed with cheese is an ultimate luxury. If you can seal it in well and cook it perfectly, you’re bound to have a burger with an amazingly-melty center when you take a bite. I’ve had several different kinds of stuffed burgers over the years, and recently realized that homemade pimento cheese wouldContinue reading “Cabot Pimento Stuffed Cheeseburger”
Sometimes, there’s nothing as delicious and indulgent as an amazing cheeseburger. I take my burgers to the next level by making the ultimate BBQ Cheeseburger, topping cheesy patties with candied bacon, homemade onion rings, and griddled pulled pork. Top generously with lots of Head Country BBQ sauce and you’ve got the ultimate restaurant-style burger atContinue reading “Ultimate BBQ Cheeseburger”

So far, we’ve made them with leftover shredded smoked chicken, and pulled pork. How to Reverse Sear Not sure how to cook that thick steak you bought? It will always taste great, but achieving an even cook throughout the steak can be tough to get. This is where the beauty of the reverse sear comes in for those thicker steaks. The thicker the steak, the better the reverseContinue reading “The Reverse Sear”
Skirt steak is a versatile cut that is great for tacos, sandwiches or just eating with your favorite sides. You can cook this cut hot and fast on a grill but my favorite method is to sous vide it and then do a quick, hot sear to get a crust. First step is to marinateContinue reading “Marinated Skirt Steak”
