The process of making these Buffalo Chicken Quesadillas is straightforward and fun. It starts with smoking the chicken leg quarters on your Traeger grill. Once the chicken is ready, it’s shredded and tossed in HeadCountry Honey Buffalo Wing Sauce.

The next step is to heat up the Traeger Flatrock Griddle and start assembling the quesadillas. You’ll place a tortilla on the griddle, add a generous amount of cheese, the buffalo chicken mixture, and top it with another tortilla. Step-by-Step

1. Smoke the Chicken

  • Preheat your Traeger grill to 225°F.

  • Remove the chicken from the grill and let it rest for a few minutes before shredding.

2. Prepare the Buffalo Chicken Mixture

  • Shred the smoked chicken leg quarters using two forks.
  • Heat the Traeger Flatrock Griddle and add a bit of oil.
  • Add the shredded chicken to the griddle and cook until it starts to get hot.

3. Heat the Tortillas

  • On another zone of the griddle, begin heating the tortillas on both sides until they are warmed through.

4. Assemble the Quesadillas

  • Place a warmed tortilla on the griddle.

  • Add a layer of the buffalo chicken mixture from the griddle.

  • Carefully flip the quesadilla using a large spatula. If necessary, add a bit of water and cover with a steam dome to help melt the cheese.

6. Serve and Garnish

  • Remove the quesadilla from the griddle and let it cool for a minute before slicing into wedges.
  • Drizzle with additional HeadCountry Wing Sauce and sprinkle with green onions.
