Marinated, smoked, shredded and sauced, the chicken in this recipe is flavorful and tender and is the perfect solution to mess-free gameday eats. All the flavors of buffalo wings atop a chip, these Smoked Buffalo Chicken Bites will make the crowd happy regardless of who wins! We amped up the flavor of this recipe using Sauceâs TRUFF Hot Sauce.
BUFFALO CHICKEN WITH A TWIST
Buffalo wings are one of my favorite foods. I love the flavor of the sauces and itâs always been a food that I just enjoy. But serving wings to a crowd for the big game next weekend can be a bit tricky because not everyone eats at the same time. And buffalo wings are inherently messyâ not the ideal food to eat while sitting on the couch.
So in order to find a less-messy and easier-to-serve solution to our problem, we came up with these delicious Smoked Buffalo Chicken Bites that we whipped together on our Traeger. Youâll have all the iconic flavors of Buffalo wingsâ hot sauce, blue cheese and celeryâ but in an easy-to-eat chip cup. For this version, we did a 50/50 blend of Truff Hot Sauce and a more vinegar-y hot sauce to make TRUFFALO sauce. So delicious!
Not only does this lessen the mess, but itâs a dish you could hold warm in the oven or a crock pot and assemble the bites as they get eaten, so they stay hot and fresh. You could also mix up the flavors in this dishâ a different wing sauce of your preferenceâ and serve a variety of wing-inspired chicken bites.
In this recipe, we cooked the chicken breasts at a pretty low heat in order to give it some really good smoky flavor. Check out the notes at the end of the recipe for ideas on how to speed up this process if you need to serve your dish in a hurry.
PRIMARY INGREDIENTS
- TRUFF Hot Sauce
- Chicken breasts
- Butter
- Hot sauce
- Cream cheese
- Blue cheese crumbles
- Celery
- Chives
- Blue cheese dressing
- Tortilla chips (the scoop type work best)
WHY COOKING THIS ON THE TRAEGER WORKS
By slow smoking the chicken on the Traeger, you will get a really delicious smoky flavor throughout the meat. It takes a bit more time to cook it at 250* rather than hot and fast, but the results are worth it.
In this recipe, the layers of flavor that are developedâ first by marinating the chicken in the TRUFFalo sauce, then by slow smoking it with wood-fired flavor, and then mixing the shredded meat with the iconic flavors of buffalo wingsâ you get a really delicious taste in a single bite.
Even if you cook this chicken at a bit higher of a temperature on your Traeger, you will still get some great smoke flavor. In addition, the efficiency of the Traeger as a cooking method makes this a really easy dish. Put the chicken in the grill and let it go! No need to check the grill temperature or stoke the fire!
STEP-BY-STEP
- In this recipe, youâll make two batches of TRUFFalo sauce for the chickenâ one as a marinade and the second as a sauce for the cooked chicken.
- Make the marinade for the chicken by combining TRUFF sauce, hot sauce and melted butter in a pan or dish. Mix well.
- Place your chicken breasts in the sauce and turn to coat. Cover the pan tightly and refrigerate for at least 1 hour.
- Preheat the Traeger Grill to 225* and use the super smoke feature if you have it.
- When the grill is hot, remove the chicken from the marinade and place it right on the grill grates. No need to remove any excess sauce as it will bake into the chicken as it cooks.
- Cook the chicken on the grill until it hits an internal temperature of 165&. At 250, this should take about 45 minutes.
- Once cooked, remove the chicken from the grill and allow to cool enough to handle it with gloved hands.
- While the chicken cools, prepare the other ingredients:
- Make another batch of TRUFFalo sauce
- Slice the celery extremely thinly
- Crumble the blue cheese
- Put the blue cheese dressing in a squirt bottle
- Pick out a few dozen chip scoops in which to serve the chicken
- Once the chicken has cooled, combine the chicken, cream cheese, celery, TRUFFalo sauce, and scallions and mix until well combined.
- Place heaping tablespoon-full scoops of TRUFFalo chicken in each chip cup.
- Sprinkle with blue cheese crumbles
- Squeeze blue cheese dressing over each cup.
- Sprinkle with chopped chives and serve.
- For best results, replenish as they get eaten so the chips stay crispy!

Smoked TRUFFalo Chicken Bites
Equipment
- Traeger grill
Ingredients
- 1 cup TRUFF Hot Sauce divided
- 2 chicken breasts
- 1/2 cup melted butter divided
- 1 cup hot sauce divided
- 1/2 cup cream cheese softened
- 1/2 cup blue cheese crumbles
- 1/2 cup celery thinly sliced
- 2 tbsp chives chopped
- 1/2 cup blue cheese dressing
- 24 or more Tortilla chips the scoop type work best
Instructions
- Make the marinade for the chicken by combining half of the TRUFF sauce, half of the hot sauce and half of the melted butter in a container and mix well
- Put the chicken breasts in the marinadeand turn to coat.
- Cover the pan and refrigerate for at least 1 hour
- Preheat yourTraeger Grill to 250* and use the super smoke
- When the grill is hot, remove the chicken from the marinade and place them on the grill grates
- Grill the chicken on the smoker until it hits an internal temperature of 165*, about 45 minutes
- Remove the chicken from the grill and allow to cool to touch
While the chicken is cooling, prep the remaining ingredients
- Make another batch of TRUFFalo sauce
- Slice the celery extremely thinly
- Crumble the blue cheese
- Put the blue cheese dressing in a squirt bottle
- Pick out a few dozen chip scoops in which to serve the chicken
Assemble the chicken mix and bites
- When the chicken is cool, shred with your hands or a fork
- Combine the chicken, cream cheese, celery, TRUFFalo sauce, and scallions and mix until well combined
- Place heaping tablespoon-full scoops of TRUFFalo chicken in each chip
- Sprinkle generously with blue cheese crumbles
- Drizzle blue cheese dressing over each cup
- Sprinkle with chopped chives and serve
