MONKEY BREAD : MEET PIZZA

One of my favorite things to cook up quickly on the Traeger is monkey bread. Super simple if you buy a monkey bread kit at the grocery store (and equally easy if you buy the biscuit dough and DIY), it’s a tasty way to share a sweet or savory treat.

Pull-Apart Pizza Bites capture the essence of a classic pizza in a compact and shareable form. Imagine golden, pull-apart muffins, each loaded with gooey cheese, pepperoni, sausage and lots of my Garlic Junkie seasoning. I like to serve these with a bowl of sauce, heated up, on the side, for plentiful dipping. These savory bites redefine the pizza experience, making it more versatile and accessible than ever.

WHAT IS MONKEY BREAD?

Monkey bread is a delicious take on pull-apart rolls, usually created by cutting up prepared biscuit dough, tossing it with butter and seasonings, and packing the pieces in a pan to cook. The result is an impressive array of perfectly cooked dough bites, seasoned well and ideal for pulling apart. Monkey bread because you eat it a bit like a monkey– with your fingers.

HOW TO MAKE IT DIFFERENT

Not only are the flavor combinations in this version of monkey bread unique and filling, but I decided to cook these pull-apart pizza bites in a muffin tin instead of a bundt pan or cake pan. The end result is that everyone can pick up their own clump of pizza-flavored monkey bread, and eat as much as they want.

In addition, this helped to ensure that every muffin had tender and crispy pieces and lots of melted cheese. There’s nothing quite as delicious as fizzled cheese as a result of baking in the Traeger.

The inspiration for this recipe comes from a desire to reimagine the joy of pizza night with a creative and convenient twist. By transforming the familiar elements of pizza into individual muffins, we bring a playful and portable aspect to the beloved pizza experience. It’s a nod to versatility and simplicity in the kitchen.

You can just imagine how much the twins enjoyed eating these. They’re very in to feeding themselves, having their own servings, and of course eating with their hands. And then when you offer dip with dinner, it all goes to the next level!

WHAT DO YOU NEED FOR PULL-APART PIZZA BITES?

Gather your essentials as this recipe comes together super quickly: refrigerated biscuit dough, a block of fresh mozzarella cheese, pepperoni, cooked and crumbled hot Italian sausage, butter and Garlic Junkie seasoning. We served a big bowl of piping hot marinara sauce along with the finished product and encouraged everyone to take some sauce or dip to their hearts’ desire. The beauty of these pull-apart bread muffins lies in customization – make them as classic or as adventurous as your taste buds desire.

COOKS UP QUICKLY IN THE TRAEGER

Once you have the pizza-flavored pull-apart bites assembled in the cupcake pan, you will pop these in the Traeger for about 15 minutes until golden brown and bubbling. You want the cheese to be melted and the top to be golden, which will ensure that the dough is cooked though.

PRIMARY INGREDIENTS

  • Refrigerated biscuit dough
  • Butter
  • Pepperoni
  • Hot Italian sausage, cooked and crumbled
  • Garlic Junkie seasoning
  • Fresh mozzarella cheese
  • Marinara sauce for serving

WHY COOKING PULL-APART PIZZA BITES IN THE TRAEGER WORKS

The beauty of these Pull-Apart Pizza Bites lies in their simplicity and versatility. The bite-sized portions make them perfect for sharing, and the assembly process is a fun activity for both adults and kids. We cook them up, like everything we make, in our Traeger grills for ultimate flavor, simplicity and ease. The grill heats up quickly, the cleanup is almost non-existent and the slight wood-fired flavor that the finished result picks up makes for a delicious and unique snack.

STEP-BY-STEP

  1. Preheat your Traeger Grill to 425*.
  2. Cook and crumble the hot Italian sausage and set aside.
  3. Cut the pepperoni into 1/4ths and set aside.
  4. Cube the mozzarella into 1/2 inch cubes and set aside.
  5. Melt the butter in the microwave.
  6. Spray nonstick cooking oil in each well of a 12-cake cupcake pan.
  7. Unwrap the biscuit dough and cut each biscuit into 1/4ths.
  8. In a big bowl, combine the cut biscuits, the butter, and Garlic Junkie.
  9. Stir to coat, and then stir in the pepperoni, sausage and cubed mozzarella.
  10. Mix well to combine and distribute the ingredients.
  11. Using a spoon or your hands, fill each muffin well generously with the prepared dough mixture.
  12. Bake the muffin tin in the preheated Traeger for about 15 minutes, until golden brown and bubbling.
  13. Warm the marinara sauce and transfer to a serving bowl.
  14. Turn out the pull-apart pizza bites to a platter and serve with the warmed sauce.

Ingredients
  

  • 2 cans refrigerated biscuit dough
  • 1 stick butter
  • 1/2 cup pepperoni
  • 2 links Hot Italian sausage cooked and crumbled
  • 1/3 cup Garlic Junkie seasoning
  • 1 cup fresh mozzarella cheese
  • 1 cup marinara sauce for serving
