Blistered Shishito Peppers with Miso Caramel & Parmesan

Ingredients:

  • 1 pound Shishito peppers
  • Olive oil
  • Sea Salt
  • 1/4 C Light miso paste
  • 1/4 C Soy sauce
  • 2 T Sesame oil
  • 1/4 C Brown sugar
  • Dash of Fish sauce
  • Parmesan cheese

Tools:

Flat pan or BBQ grill basket

Small heavy saucepan

Whisk

Grill tongs

A hot grill (charcoal is preferable) with direct heat/flames

Directions: 

Wash shishito peppers and place in a bowl (no need to dry- a little moisture is good)

Drizzle with olive oil and sprinkle with sea salt. Set aside

In a small heavy saucepan, combine miso paste, soy sauce, sesame oil, brown sugar, and fish sauce and cook over medium heat until miso and sugar melts, and the sauce becomes thick like caramel, set aside but keep warm

Pour prepared peppers onto flat pan, and place directly over intense heat/flame on your grill

Cook, turning frequently, for about 5 minutes until the peppers are well blistered and softened

Transfer to serving platter and drizzle with Miso Caramel

Sprinkle with parmesan and serve

Note that shishito peppers are generally not spicy, but are known for the “1 in 10” rule that occasionally you’ll have a spicy one. Enjoy!

  • A smoker grill or open flame
  • A saucepan and whisk
  • A grill pan, if preferred
