Breakfast Kebabs

Ingredients:

  • 3 links of precooked sausage (we used Polish sausage)
  • 2 Young potatoes, peeled, and cut into 1-inch cubes
  • 1 Yellow bell pepper, cut into 1-inch squares
  • BBQ seasoning of your choice
  • Pat of butter 
  • Two eggs

Tools:

  • Stainless steel skewers
  • Saucepan of boiling water
  • Sharp knife
  • Grill or firepit with direct heat source
  • Small grill-proof frying pan

Directions:

Place peeled, cubed potatoes in boiling water and cook until just fork tender 

Cut sausage links into 1-inch pieces

Assemble skewers by alternating sausage, boiled potatoes and bell pepper pieces

Once assembled, season generously with your favorite BBQ seasoning/rub

Place on hot grill and cook over direct heat for 15-20 minutes until potatoes brown and sausage is heated through. Rotate often to ensure even cooking.

About 10 minutes into cook, heat your grill-proof frying pan over the fire, and begin melting butter

Crack two eggs into melted butter, and cook eggs gently until over-easy. Season with BBQ rub if you’d like. 

Serve skewers and over-easy eggs hot, like a rustic hash
