Around here, we believe good meals don’t have to be complicated. As a dad of two hungry toddlers (Beatrice and Bodie), a teacher, and a year-round backyard cook in Colorado, I’m always looking for meals that check all the boxes: fast, flavorful, family-friendly, and doable on a weeknight. This weeknight recipe came together in about 30 minutes start to finish—prep, cook, and clean-up included.   • Graza “Sizzle” Cooking Oil Spray – We used this to coat the griddle and the skewers lightly. It helps everything crisp up and keeps the shrimp from sticking.
  • Bamboo Skewers – Make sure to soak them briefly in water if you’re worried about scorching.

How to Assemble and Cook the Skewers

This recipe is as straightforward as it gets. Here’s the breakdown of how we pulled this meal together on the Traeger Flatrock Griddle.

Step 1: Prep the Shrimp and Sausage

Start by seasoning the raw shrimp generously with Garlic Junkie seasoning. Give it a toss in a bowl and let it sit while you slice the sausage.

The SRF Jalapeño Cheddar Sausages are pre-cooked, so you just need to cut them into thick, even coins. Aim for about 1/2-inch thickness so they’ll cook and char evenly.

Step 2: Build the Skewers

Alternate the sausage and shrimp on bamboo skewers. We did 3-4 pieces of each per skewer, depending on the size. You want everything to be snug but not crammed together.

This step is easy enough that older kids can help, and if you make extras, they reheat beautifully for lunch the next day.

Step 3: Preheat the Flatrock

We fired up the Traeger Flatrock Griddle and set it to medium-high heat. A quick coat of Graza “Sizzle” ensured the skewers wouldn’t stick.

The Flatrock is ideal for this kind of recipe—it gives even, edge-to-edge heat, so you’re not rotating skewers every two seconds or chasing hot spots. And because you’re not dealing with an open flame, you don’t get flare-ups from the sausage fat.

Step 4: Grill the Skewers

Place the skewers on the hot griddle and cook for about 2–3 minutes per side, flipping carefully with tongs. Once the shrimp are pink and opaque and the sausage has a nice char, you’re ready for the glaze.

Brush on a layer of Head Country Honey BBQ Sauce, let it caramelize for another 30 seconds per side, and pull them off.

Ingredients
  

  • 1 lb raw shrimp peeled and deveined
  • 2 jalapeño cheddar sausages sliced into ½-inch rounds
  • 1 tbsp Garlic Junkie seasoning
  • 3 tbsp Head Country Honey BBQ Sauce
  • Cooking spray or oil we used Graza Frizzle

Instructions
 

  • Preheat the Traeger Flatrock to medium-high heat.
