Homemade Cheese Sauce

One of our go-to side dishes is homemade macaroni & cheese. People love it, it can be made ahead and then kept hot or reheated when the BBQ cook is done. When you’re cooking something like brisket, this is important because the food is done when it’s done. 

This homemade cheese sauce can be used for macaroni & cheese, but also on things like cheesesteak sandwiches (check out the instagram post of that- March 9th). 

Ingredients

  • 2tbsp unsalted butter
  • 2tbsp flour
  • 1/2 cup milk or cream
  • 1-2 cups shredded cheese (your choice, but we prefer a mix of mozzarella, cheddar and parmesan)
  • 1tsp powdered mustard
  • 1/2tsp garlic powder
  • several dashes of your favorite hot sauce
  • salt & pepper to taste

Melt the butter in a small, heavy saucepan. Once it has just started to brown, stir in flour to make a roux. Whisk to combine and allow to brown slightly. Slowly add milk/cream and stir to combine fully. Cook on low to thicken slightly, whisking often. Add powdered mustard, garlic powder and hot sauce, and stir well. Begin stirring in shredded cheese, and mix until well melted and combined. Season with salt and pepper to taste, and use immediately or cover to reheat for future use.

Equipment

  • A heavy-bottomed saucepan
  • A whisk

Ingredients

  • 1-2 cups shredded cheese any type works
  • 1 tsp powdered mustard
  • ½ tsp garlic powder
  • several dashes your favorite hot sauce
  • salt & pepper to taste

Instructions
 

  • Melt the butter in the saucepan.
  • Once it has started to brown, stir in the flour and cook to make a roux.
  • Whisk to combine and allow to slightly brown.
  • Slowly add the milk/cream and stir to combine fully.
  • Cook on low heat to thicken slightly, whisking often.
  • Add mustard, garlic and hot sauce and stir well.
  • Begin stirring in shredded cheese and mix until well melted and combined.
  • Season with salt and pepper to taste, and use immediately or cover and reheat for future use.
