Marinated Grilled Salmon Bowl

Don’t get stuck in a dinner rut and mix up your meals with this easy to make grilled salmon bowl. After seeing several ideas for similar dishes on Pinterest, we decided to give it a go with our own twist. What we ended up with was sort of like a sushi roll in a bowl.

You can substitute ingredients for your preferences or whatever you have on hand. You can add different veggies, use noodles instead of rice, or substitute a different protein for the salmon.

I started with a simple marinade for the salmon made of honey, soy sauce, olive oil, lime juice, fresh garlic and chili sauce. Mix it all together in a shallow pan and add the salmon skin side up. If there isn’t any skin on your salmon, rotate it halfway thru the marinade process to get all the sides. You only need to marinade for about 30 minutes in the fridge.

Start the grill at 375 degrees. Take the salmon out of the marinade and place on a piece of butcher paper or directly on the grates.

Cook the salmon for about 15/20 minutes until it reaches 145 degrees. I like to cook it a little more rare and take it to 135 degrees.

As the salmon is cooking make the rest of the ingredients (prep the veggies, cook the rice, etc). We started with a spicy mayo, which was a combination of mayo, lime juice and a good amount of Spiceology Sriracha Honey Garlic for a nice kick.

When the salmon reaches temperature take it out of the grill and flake the fish with a fork. We like big pieces of fish for this dish.

Now it is time to assemble the salmon bowl.

I started with a couple scoops of sticky white sushi rice, quick stir-fried snow peas, quick-pickled veggies, slices of avocado, a piece of nori, pickled ginger, a soft-dish boiled egg, crispy panko bread crumbs and lots of salmon.

Top with scallions and a drizzle of the spicy mayo and dig in!
