S’Mores Dip on the Traeger

In honor of national S’mores Day (yep, that was August 10, 2022, but it’s taken a while to get this content up), we bring you a quick and easy recipe to share with family and friends in celebration of the end of summer. There’s nothing better than an ooey gooey dessert, shared with your kids, to recognize the changing of seasons and the return back to school. I would know… as an elementary STEM teacher, the back-to-school season is both exciting and overwhelming, and I know my heartache at summer ending will be comforted by S’Mores Dip hot off the Traeger.

WHAT IS A S’MORE?

For those that like to camp, S’Mores as are the quintessential camping food. As the parent of 1 year old twins, I have to admit that I am befuddled by the concept that people would encourage such a messy dessert while camping. I mean, maybe because we’re already messy from camping, what harm would some melted marshmallows and chocolate add to a messy kid. But the stickiness? Yikes.

A quick search of Google suggests that S’Mores have been around since about 1927 where it was featured in a Girl Scout manual. As the name suggests, you’ll want more and more. Aka, ‘s’more’!

Traditionally, S’Mores are a graham cracker sandwich where a toasted marshmallow and a piece of chocolate are squished between the crackers. With the toasted marshmallow (toasted to the desired doneness of the eater– anywhere from barely warm to blackened), the warmth starts to melt the chocolate just enough that it really is gooey and delicious.

VARIATIONS OF THE S’MORE

Certainly, the most traditional way to do a S’More is to sandwich a puffy toasted marshmallow and a piece of Hershey’s milk chocolate between two honey graham crackers. That’s the way it’s most often done, and it definitely has flavors that harken back to childhood.

However, we like to do different variations on S’Mores when we make them the traditional way, to mix up the flavors. Here are some ideas:

  • Substitute chocolate graham crackers for honey ones
  • Or use a cookie (of any variety) instead of the crackers
  • Use gourmet marshmallows
  • Use stuffed marshmallows
  • Instead of Hershey’s chocolate, consider a different kind of chocolate
  • Mounds bars
  • Peanut butter cups
  • Dark chocolate
  • Andes Mints
  • Peanut butter chips
  • Add things to make them more interesting like
  • Banana or strawberry slices
  • Candied bacon
  • Caramel

WHY COOKING S’MORES ON THE TRAEGER WORKS

The Traeger is the ideal tool to use to make s’mores dips. The consistent, even heat of the Traeger is the best environment to heat up the dip, melt all the chocolate and gently toast the marshmallows. At the end, if you’re like me and like a little char on your marshmallows, you can hit the dip with a blow torch for a quick second to get some deep char on some of the marshmallows.

But the great thing about cooking this dish in the Traeger is that the even, consistent heat of the pellet smoker, paired with the even heating nature of a cast iron pan, leads to melty chocolate insides, soft and gooey marshmallows and just the right amount of golden brown to harken back to s’mores over a campfire.

INGREDIENTS

For this dish, it’s a pretty simple mixture of ingredients. Feel free to use things you have on hand so you don’t need to run to the store!

  • Marshmallows (we used two kinds– big puffy ones and stuffed ones)
  • Chocolate chips (I like semisweet ones)
  • Other chips (we used peanut butter chips)
  • A little bit of softened butter
  • An assortment of dipping devices like graham crackers, nilla wafers, animal crackers, etc.

STEP-BY-STEP

  • Preheat your Traeger Grill to 350* and close the lid.
  • While the grill preheats, prepare the dip inside.
  • In a 12″ cast iron pan, break apart 2 tbsp of softened butter and spread around the pan.
  • To the butter in the pan, add half of each of the chocolate chips and the other chips.
  • Use a spoon to stir the mixture to combine.
  • Add the remaining chips and stir to distribute, then spread it out evenly in the pan.
  • Top the chocolate mixture with marshmallows.
  • If using two kinds of marshmallows, alternate them on top so that they melt more evenly.
  • Place the prepared pan in the hot Traeger and close the lid
  • Allow to cook for about 15 minutes, checking regularly. The marshmallows will puff up in the heat and may drip over the sides of the pan.
  • Cook until the marshmallows are toasted, and toast extra with a blow torch at the end if desired.
  • Carefully transfer the hot pan indoors and serve the s’mores dip with a variety of tasty edible dipping utensils.

Equipment

  • Traeger Timberline XL
  • Cast iron skillet
  • Spoon

Ingredients
  

  • 1 bag of marshmallows
