Smoky & Spooky Traegered Halloween Eats

Halloween is coming up in a few days and we’re getting organized for a couple spooky gatherings with family and friends. Of course, we’re bringing food to the parties and have two delicious offerings to share– Spiderweb Brownies and Smoky Deviled Eggs– both cooked up on the Traeger with ingredients we had conveniently delivered to our house with Safeway’s Fresh Pass program. Without ever having to leave the house (except to grill in the backyard), we are able to bring smoky and spooky Halloween treats to the parties on our agenda this weekend. 

HALLOWEEN SEASON IS HERE!

Somehow, it’s already the end of October and that means Halloween season is in full swing! But it’s also a super busy time of year– and with 15 month old twins underfoot, going to the grocery store is low on our list of things to accomplish. It needs to happen, but taking the twins out for a grocery outing is challenging!

SAFEWAY FRESH PASS 

So we’ve been super excited to use Safeway’s new Fresh Pass program to make grocery shopping so easy. We started with the free 30-day trial on the app and were hooked on how easy it’s made our life. With a couple simple clicks, we can load our grocery list into the app, select a delivery time and we get free delivery on orders over $30. Seriously– from baking supplies to dinner ingredients to milk for the kiddos, it’s made our life so easy!

And with Halloween parties ahead of us this weekend, there was no easier way to tell our hosts we would bring things, but not have to exert too much extra effort. A quick visit to the Safeway app allowed us to order all the ingredients we needed for these dishes, and we never had to leave the house! The unlimited free delivery seals the deal!

SMOKY AND SPOOKY

For a holiday gathering like Halloween, finger foods are the ideal thing to contribute. It cuts down on the need for plates and forks and your guests have the chance to sample a variety of things brought by everyone. 

We decided to add smoky and spooky Halloween eats to the menu at our friends’ party– Spiderweb Brownies baked on the Traeger and Smoked Deviled Eggs. One sweet, one savory. Both cooked up on the Traeger and highlighting the creative ways you can use your backyard smoker grill year-round. 

SPIDERWEB BROWNIES

For the sweet dish, we made a homemade brownie batter that was super dark and rich. The great thing about this recipe is that the brownies come out a dark brown color, which makes them extra theme-y for the holidays.

A rich layer of chocolate batter is studded with semisweet chocolate chips to add an extra oomph to the chocolate flavor. We spread that layer in an 8×8 baking dish and then topped it with a decorative drizzle of cream cheese mixed with eggs, and dyed orange for impact. Using a sandwich bag as a makeshift piping bag, we were able to create a delicate pattern all over the top of the brownies, which we made look like a spider web. 

These spiderweb brownies baked in the Traeger for about 30 minutes and came out chocolatey and delicious. By baking in the Traeger at 350*, you get nearly no wood-fired flavor in the cook, but all the benefits of convection cooking. The temperature in the grill remains remarkably consistent throughout the cook thanks to the design of the barrel and the circulation of air that moves the heat around. 

Especially thanks to the fact that the weather here in Colorado is still inconsistent– some days are warm and others are freezing– it’s nice to not have to use the oven in the house for a project like this. Plus, nobody complains when they’ve heard you baked them spiderweb brownies on the Traeger!

SMOKED DEVILED EGGS

Deviled eggs are a family favorite around here– delicious and rich and so versatile in how you doctor them up. One of our favorite ways to amp up the flavor on deviled eggs is to smoke the eggs briefly on the Traeger after boiling them, to give them a bit of wood-fired flavor. 

To make these deviled eggs extra Halloween-y, we made the egg whites have spider web lines thanks to a soak in colored water before peeling. It’s super cool that you can boil the eggs, crack the shells with the back of a spoon and leave the shells intact. Then the eggs get soaked in colored water and magically the eggs emerge with an amazing pattern all over the whites. 

Because we wanted just a bit of smoky flavor on these eggs, we put them, still in the shell, in the Traeger for about 20 minutes on a high smoke setting before making the deviled eggs. This resulted in just the right amount of flavor. 

For this recipe, we picked out all the ingredients we needed on the Safeway app and used the Fresh Pass feature to have them dropped at our front door. We took these deviled eggs to the next level with the addition of chopped bacon, scallions and candy eyeballs. A little smoky, definitely spooky, and so delicious!

PRIMARY INGREDIENTS

Spiderweb Brownies

  • Signature Select granulated sugar
  • Signature Select all-purpose flour
  • Dark cocoa powder
  • Salt
  • Signature Select baking powder
  • Lucerne Farms eggs
  • Signature Select vegetable oil
  • Signature Select Vanilla Extract
  • Signature Select Semi-Sweet Chocolate Chips
  • Lucerne cream cheese
  • Orange food coloring

Smoked Deviled Eggs

  • Lucerne Farms eggs
  • Blue, green and purple food coloring
  • O Organics mayonnaise
  • Signature Select Dijon mustard
  • Signature Select Louisiana hot sauce
  • Signature Select white wine vinegar
  • Salt & pepper
  • Scallions or green onions
  • Signature Farms thick-cut hickory smoked bacon
  • Candy eyeballs

WHY COOKING SMOKY AND SPOOKY EATS ON THE TRAEGER WORKS 

As mentioned, we love cooking everything on the Traeger because it’s fun and different. For a holiday gathering like a Halloween party, it’s super fun to bring things to contribute to the potluck that are cooked in unique ways. We made these spiderweb brownies and smoked deviled eggs on the Traeger, which gave a unique twist to both. 

With the Traeger, you can do everything from slow, cool smoking (like for the eggs), to high-heat searing on the same grill. The ability to bake things like brownies is just an added bonus. We love baking on the Traeger because it’s consistently able to push out great results.

STEP-BY-STEP

  • BROWNIES
  • Preheat your Traeger Grill to 350* and line an 8×8 glass baking dish with parchment paper and then grease liberally.
  • In a bowl, combine the sugar, flour, cocoa powder, salt and baking powder until well blended. 
  • In a small bowl, mix the eggs, oil and vanilla until combined. 
  • Pour the wet ingredients into the dry ingredients and stir with a rubber spatula until just combined. Do not over-mix!
  • Transfer the brownie batter to the prepared dish and smooth the top. 
  • In a new bowl, combine the cream cheese and eggs until well blended and smooth. 
  • Add orange food coloring to the cream cheese mixture– add enough to turn the cream cheese really orange! 
  • Pour the cream cheese mixture into a plastic sandwich bag and remove all the air. 
  • Snip off the corner of the bag and use it as a piping bag to decorate the top of the brownies.
  • We made a spiral from the center out on the brownie layer, keeping the lines close together. 
  • Using a toothpick or wooden skewer, drag through the brownie layer from the center out, making a spider web pattern. 
  • Place the prepared brownies in the preheated grill and bake for 30-35 minutes until just set.
  • Remove from the grill and allow them to cool before slicing your spiderweb brownies.  
  • DEVILED EGGS
  • In a saucepan, submerge eggs in cool water and bring it to a boil. 
  • Once the water is boiling, turn off the heat and cover the pan. Set a timer for 15 minutes. 
  • While the eggs cook, combine about 2 cups of water with several drops each of blue, green and purple food coloring in a container. 
  • After 15 minutes has elapsed, rinse the eggs under cool water until you can handle them, then use the back of a spoon to crack the shells all over. 
  • Do not remove the shells!
  • Submerge the cracked eggs in the prepared colored water and place the container in the fridge for 12 hours or overnight. 
  • 12 hours later, preheat your Traeger Grill to 225* with the super smoke feature. 
  • Remove the eggs from the water and place them on the grates in the smoking grill. 
  • Smoke the eggs in the grill for 20-30 minutes. 
  • Remove the eggs from the grill and peel them. 
  • Assemble the remaining ingredients to make the deviled eggs. 
  • Cut the eggs in half lengthwise, then scoop out the yolks.
  • In a bowl, combine the yolks, mayonnaise, mustard, hot sauce and vinegar. Mash until smooth. Season to taste with salt and pepper. 
  • Add several drops of orange food coloring to the egg yolk mixture, until it reaches the color you desire. 
  • Cook the bacon and chop finely. Mince the scallions.
  • Transfer the egg yolk mixture to a plastic sandwich bag and snip off the corner. 
  • Pipe the egg yolk filling into the cavities in the egg whites. 
  • Sprinkle with bacon pieces and scallions. 
  • Add candy eyeballs and decorate as desired. 
  • Serve smoky deviled eggs immediately.
