Instructions
 

  • Prepare the Chicken:
  • Pound chicken breasts to an even thickness or butterfly them for faster cooking.
  • Season generously with Hardcore Carnivore Tex Mex seasoning on all sides.
  • Cook the Bacon and Onions:
  • Preheat the Traeger Flatrock to medium-high.
  • Cook chopped bacon for 5 minutes or until starting to crisp.
  • Add chopped onions and continue cooking until bacon is crispy and onions are translucent.
  • Transfer bacon and onions to a bowl and set aside.
  • Cook the Chicken:
  • Place seasoned chicken on the hot griddle.
  • Turn frequently, cooking until internal temperature reaches 140°F.
  • Brush chicken generously with Headcountry ancho BBQ sauce.
  • Add Toppings:
  • Top each chicken breast with cooked bacon and onions.
  • Lay pepper jack cheese slices over the chicken.
  • Cover with a lid or metal bowl to melt the cheese.
  • Continue cooking until internal temperature reaches 160°F and cheese is fully melted.
  • Finish and Serve:
  • Transfer chicken to a preheated small skillet on the griddle to keep warm.
