Ingredients
  

  • Juice of 1 orange
  • Juice of 1 lemon
  • 3 tbsp Melinda’s Mexicana Hot Sauce
  • 1 tbsp Achiote seasoning
  • 1 lb boneless skinless chicken thighs

Instructions
 

  • Prepare the Marinade:
  • In a medium bowl or pan, whisk together the orange juice, lemon juice, hot sauce, and achiote seasoning until the seasoning dissolves.
  • Marinate the Chicken:
  • Add the boneless, skinless chicken thighs to the marinade. Turn to coat the chicken thoroughly. Cover and refrigerate for at least 15 minutes.
  • Preheat the Traeger Flatrock:
  • Set the Traeger Flatrock Griddle to medium-high heat. Lightly oil the griddle to prevent sticking.
  • Grill the Chicken:
  • Remove the chicken thighs from the marinade, shaking off excess liquid. Place the thighs on the preheated griddle.
  • Cook for 5 minutes on each side or until the internal temperature reaches 160°F. Use a meat thermometer for accuracy.
  • Rest and Chop:
  • Remove the chicken from the griddle and let it rest for 5 minutes to retain juices.
  • Chop the chicken into bite-sized pieces and serve in your favorite dishes.
