Quick Griddled Beef Larb

A fast and flavorful beef larb cooked on a flat top griddle and served over sushi rice with a bright cucumber salad.

Ingredients
  

  • 1 lb Snake River Farms ground beef
  • ¼ cup Japanese barbecue sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon ginger paste
  • 1 tablespoon brown sugar
  • Juice of 1 lime
  • 2 green onions sliced
  • ¼ cup chopped cilantro
  • 2 tbsp chopped basil
  • 1-2 teaspoons chili sauce we used sweet chili sauce to keep it kid-friendly. use spicy for more heat!

For Serving

  • 2 cups cooked sushi rice
  • 2 cups sliced cucumbers
  • 2 tablespoons rice vinegar
  • 1 teaspoon sugar
  • Pinch of salt
  • 1 tbsp each chopped basil and cilantro
  • 1 lime, cut in half

Instructions
 

  • Preheat griddle to medium-high heat.
  • Add ground beef and sear before breaking apart.
  • Cook until browned and fully done.
  • Stir in sauce ingredients and toss to coat.
  • Add green onions and cilantro.
  • Toss cucumbers with vinegar, sugar, and salt.
  • Serve beef over rice with cucumber salad.

Notes

Tips & Tricks
Let the beef sear before stirring for better caramelization.
Adjust lime and vinegar to taste.
Double for leftovers.
