McGuckin Spicy Ranch Grilled Red Potatoes

These McGuckin Spicy Ranch Grilled Red Potatoes are an easy, flavor-packed side dish made with crispy grilled red potatoes, bacon, fresh scallions and McGuckin Spicy Ranch sauce. Cook the potatoes on your pellet grill until tender and browned, then toss everything together just before serving for an easy side that's perfect for BBQ, burgers, grilled chicken or feeding a crowd.

Ingredients
  

  • 2 pounds small red potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons Garlic Junkie seasoning
  • 1/2 cup cooked and crumbled bacon
  • 3-4 scallions thinly sliced
  • McGuckin Spicy Ranch sauce to taste

Instructions
 

  • Preheat your pellet grill to 400°F.
  • Wash the potatoes and cut them into evenly sized quarters.
  • Toss the potatoes with olive oil, kosher salt, black pepper, garlic powder and BBQ seasoning.
  • Spread the potatoes onto a large sheet pan in a single layer, leaving some room between the pieces.
  • Put the sheet pan directly on the pellet grill and cook for 35-45 minutes, stirring or turning the potatoes a few times.
  • Check one of the larger pieces with a fork or knife. The center should be completely tender.
  • For additional browning, increase the grill temperature to 425-450°F for the final few minutes.
  • Transfer the hot potatoes to a large serving bowl and add the bacon and sliced scallions.
  • Drizzle with McGuckin Spicy Ranch sauce and toss until lightly coated.
  • Taste and add additional Spicy Ranch if desired. Serve immediately.

Notes

Make-Ahead Instructions
Cook the potatoes until tender and lightly browned, but don't add the Spicy Ranch, bacon or scallions yet. When you're ready to serve, reheat the potatoes on a hot grill or griddle until they're hot and the edges have crisped again.
Add the bacon, scallions and Spicy Ranch after reheating and serve immediately. This keeps the potatoes from sitting in the sauce and softening the browned edges.
Tips for the Best Grilled Red Potatoes
Keep the potato pieces similar in size so they cook evenly, and don't overcrowd the pan. Leaving some room between them allows moisture to escape and helps the potatoes brown instead of steam.
Use enough oil to lightly coat the potatoes without making them greasy. Get the centers tender first and then increase the heat at the end if you want more color and crispiness.
