Equipment

  • Pit Boss pellet grill or smoker
  • Pit Boss Navigator (or pellet grill capable of baking at 350°F)
  • Pit Boss griddle (or skillet for cooking hot dogs)
  • Cast iron skillet
  • Mixing bowl
  • Spatula

Ingredients

  • 1 block 8 oz cream cheese
  • 1 to 2 tablespoons Cowboy Butter BBQ rub or favorite BBQ seasoning
  • 2 cans 15 oz each no-bean chili
  • 5 to 6 beef hot dogs sliced and cooked
  • 2 cups shredded cheese cheddar or cheddar jack works best
  • 1 jalapeño sliced (optional)
  • 2 tablespoons sliced green onions optional
  • Fritos or sturdy chips for dipping

Instructions

  • Preheat Pit Boss smoker to 225°F. Score cream cheese in a crosshatch pattern and season generously with Cowboy Butter rub. Smoke for 60 to 90 minutes until softened and lightly golden.
  • While cream cheese smokes, slice hot dogs and cook on Pit Boss griddle until heated through and slightly charred. Set aside.
  • In a mixing bowl, combine smoked cream cheese and both cans of chili. Stir until smooth and fully blended.
  • Add cooked chopped hot dogs to the mixture and fold together evenly.
  • Transfer mixture into a cast iron skillet and spread evenly. Top generously with shredded cheese.
  • Increase Pit Boss temperature to 350°F and place skillet in grill. Cook for 35 to 40 minutes until hot, melted, and bubbling.
  • Remove from grill and top with sliced jalapeños and green onions if desired. Serve hot with Fritos or sturdy chips for dipping.

Notes

Use block cream cheese for best texture and melting.
No-bean chili provides best consistency for dipping.
Fresh shredded cheese melts smoother than pre-shredded.
Cook hot dogs first for better flavor and texture.
Serve hot for best scoopable consistency.
Make extra — this dip disappears quickly.
