Homemade Cheese Sauce

This cheese sauce can be adapted for a number of uses-- from mac-n-cheese to cheesesteaks!

Equipment

  • A heavy-bottomed saucepan
  • A whisk

Ingredients
  

  • 2 tbsp unsalted butter
  • 2 tbsp flour
  • ½ cup cream or milk
  • 1-2 cups shredded cheese any type works
  • 1 tsp powdered mustard
  • ½ tsp garlic powder
  • several dashes your favorite hot sauce
  • salt & pepper to taste

Instructions
 

  • Melt the butter in the saucepan.
  • Once it has started to brown, stir in the flour and cook to make a roux.
  • Whisk to combine and allow to slightly brown.
  • Slowly add the milk/cream and stir to combine fully.
  • Cook on low heat to thicken slightly, whisking often.
  • Add mustard, garlic and hot sauce and stir well.
  • Begin stirring in shredded cheese and mix until well melted and combined.
  • Season with salt and pepper to taste, and use immediately or cover and reheat for future use.
