Traeger Grilled Lemonade Chicken

Juicy and flavorful chicken, grilled on the Traeger, is the result of this dish that uses the drink of summertime as the marinade base.

Equipment

Ingredients
  

  • 1 pound chicken pieces legs and drums
  • 2 cups lemonade
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 2 tbsp hot sauce
  • 1 tsp oregano
  • 1 white onion minced
  • 4 tbsp Garlic Junkie seasoning
  • 2 whole lemons

Instructions
 

  • Assemble all your ingredients.
  • Using a sharp knife, score the skin side of the chicken thighs.
  • Then butterfly the chicken drums so that you have more surface area on the meat.
  • In a pan or bowl, make the marinade.
  • Combine the lemonade, chopped white onion, mustard, olive oil, hot sauce, oregano and garlic junkie.
  • Whisk until well blended.
  • Add the prepared chicken pieces to the marinade, turning to coat.
  • Be sure that each piece of chicken is nestled into as much of the marinade as possible.
  • Cover the marinading chicken and put in the fridge for at least 2 hours, and up to 24.
  • About an hour before dinnertime, preheat your Traeger Grill to 350*.
  • When the grill is hot, remove the chicken from the marinade and place them right on the grill grates.
  • Reserve the marinade and put it in a sauce pan.
  • Bring the reserved marinade to a full boil on the stovetop, and cook for 15 minutes until well reduced.
  • Allow the chicken to cook to an internal temperature of 140*.
  • Once it has hit that temperature, turn the chicken over on the grill.
  • Using a long-handled basting brush, coat each piece of chicken with some of the reduced sauce.
  • Cut the lemons in half and put them cut side down on the grill, cooking until golden.
  • Turn the chicken again and continue cooking and basting until the internal temperature reaches 165* and are golden brown.
  • Cooking time should be about 45 minutes total.
  • Remove the chicken from the grill and place on a plate, loosely tented.
  • Serve the chicken with some of the reduced sauce on the side. Enjoy!
