Smoked Peach Daiquiri on the Traeger

Capitalizing on the amazing fresh peaches that are hitting grocery stores and farmers markets this time of year, this quick and easy cocktail highlights the flavors of the season. Pop the peach halves and the cut limes on the Traeger for about 30 minutes at 225* and you imbue some great wood-fired flavor in this drink. Bottoms up!

Equipment

  • Traeger grill
  • Knife
  • Blender
  • Citrus juicer (optional)

Ingredients
  

  • 4 whole ripe peaches
  • 4 whole limes
  • ½ cup white sugar
  • 1 cup white rum
  • 2 cups ice cubes

Instructions
 

  • Preheat your Traeger grill to 225* with the super smoke feature enabled
  • While the grill heats, slice the peaches in half and remove pits
  • Cut the limes in half
  • Place the peach halves and the lime halves on the grill and close the lid
  • Allow the fruit to smoke for at least 20 minutes, until heated through and somewhat caramelized
  • Pull the fruit from the grill and place on a cookie sheet or pan in the refrigerator
  • Refrigerate the fruit until cold throughout
  • *optional: pull the skins off the peach halves, if desired
  • Place the peach halves in the blender
  • Squeeze the lime juice and some pulp into the blender jar
  • Close the lid and puree until the fruit is smooth
  • Open the jar and add the rum and sugar, mixing to combine
  • Pour in the ice cubes and blend on high until consistently smooth
  • Transfer to a glass and serve with a lime round
