Blistered Shishito Peppers with Miso Caramel & Parmesan
A delicious side dish or appetizer using Shishito Peppers-- which are about "1 in 10 spicy".

- 1 pound Shishito peppers
- 2 tbsp olive oil
- 1 tbsp sea salt
- ¼ cup light miso paste
- 2 tbsp sesame oil
- ¼ cup brown sugar
- dash fish sauce
- ¼ cup parmesan cheese
Wash shishito peppers and place in a bowl (no need to dry- a little moisture is good).
Drizzle with olive oil and sprinkle with sea salt. Set aside.
In a small heavy saucepan, combine miso paste, soy sauce, sesame oil, brown sugar, and fish sauce and cook over medium heat until miso and sugar melts, and the sauce becomes thick like caramel, set aside but keep warm.
Pour prepared peppers onto flat pan,and place directly over intense heat/flame on your grill.
Cook, turning frequently, for about 5 minutes until the peppers are well blistered and softened.
Transfer to serving platter and drizzle with Miso Caramel.
Sprinkle with parmesan and serve.
