Smoked Deviled Eggs

Traditional deviled eggs are kicked up a notch when given a spider web treatment, smoked and stuffed with an orange-tinted filling. Top with bacon bits and you've got a party treat to share!

Equipment

  • Saucepan and boiling water

  • Traeger grill
  • Knife

Ingredients
  

  • 6 Lucerne Farms eggs
  • Blue green and purple food coloring
  • 1/4 cup O Organics mayonnaise
  • 1/4 cup Signature Select Dijon mustard
  • 1 tsp Signature Select louisiana hot sauce
  • 1 tsp Signature Select white wine vinegar
  • Salt & pepper
  • Scallions or green onions
  • 2 slices Signature Farms thick-cut hickory smoked bacon
  • Candy eyeballs

Instructions
 

  • In a saucepan, submerge eggs in cool water and bring it to a boil.
  • Once the water is boiling, turn off the heat and cover the pan. Set a timer for 15 minutes.
  • While the eggs cook, combine about 2 cups of water with several drops each of blue, green and purple food coloring in a container.
  • After 15 minutes has elapsed, rinse the eggs under cool water until you can handle them, then use the back of a spoon to crack the shells all over.
  • Do not remove the shells!
  • Submerge the cracked eggs in the prepared colored water and place the container in the fridge for 12 hours or overnight.
  • 12 hours later, preheat your Traeger Grill to 225* with the super smoke feature.
  • Remove the eggs from the water and place them on the grates in the smoking grill.
  • Smoke the eggs in the grill for 20-30 minutes.
  • Remove the eggs from the grill and peel them.
  • Assemble the remaining ingredients to make the deviled eggs.
  • Cut the eggs in half length wise, then scoop out the yolks.
  • In a bowl, combine the yolks, mayonnaise, mustard, hot sauce and vinegar. Mash until smooth. Season to taste with salt and pepper.
  • Add several drops of orange food coloring to the egg yolk mixture, until it reaches the color you desire.
  • Cook the bacon and chop finely. Mince the scallions.
  • Transfer the egg yolk mixture to a plastic sandwich bag and snip off the corner.
  • Pipe the egg yolk filling into the cavities in the egg whites.
  • Sprinkle with bacon pieces and scallions.
  • Add candy eyeballs and decorate as desired.
  • Serve smoky deviled eggs immediately.
